Fruit Salad

Friday, September 11, 2009

This is probably one of my most favorite things to make, it’s good just to eat just because you want too.  It’s good because it’s fruit and I can eat my strawberries without sugar.  It is great to take anywhere as a covered dish, in fact people request it.  There are many variations of fruit salad.  Mine is made to accommodate me, very simple, very good.  This is enough for a small family to eat more then once or for a small gathering of people.  You can of course use more or less to meet your needs.

In a large mixing bowl or large plastic container (preferably something w. a lid or something you can cover tightly) combine the following:

2-Red Delicious Apples, discard the core and cut into cubes.  I leave the peels on but that is optional.

2-Oranges, peeled and cubed, try to retain as much juice as possible

1-Pound Grapes.  Cut in half or leave whole, I like to cut them in half so the juices can get out.

1-Pound Strawberries, cut in 4’s.

1-Jar (24.5 oz) Dole Peaches, pour all juice into bowl or container, cut peaches in halves.

Mix everything up, seal the bowl or container with a lid or plastic wrap and let “marinate” over night.

The next day, serve and enjoy.  You can technically eat this as soon as you want but if you give all the juices time to combine and get absorbed by the fruit it makes it all the better.  You can also add 2 bananas peeled and cut up, but don’t add them until serving time, they will get brown and mushy.
