Chili Con Carne

This is a pretty popular recipe around my house.  It can be made on the stove or over the course of the day in a crock pot.  We like to serve it up with cooked yellow rice and top it with sour cream and cheddar cheese.


  • 1 Medium Green Pepper, chopped
  • 1 Medium Onion, chopped
  • 1-1/2 lbs Ground Beef
  • 1-28 oz can whole peeled tomatoes, undrained, cut up
  • 1-40 oz can red kidney beans (you can use less beans if you prefer)
  • 1-14-1/2 oz can beef broth
  • 1-6 oz tomato paste
  • 2 tsp minced garlic
  • 2 TBSP chili powder
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1/2 tsp red pepper

Fully cook ground beef in frying pan.  Put all ingredients and cooked ground beef (drained) into stockpot or crock pot.  In crock pot cook 4-6 hours on high or 8-10 hours on low.  In stockpot on stove cook 1 hour or until thickened stirring occasionally.

Serve over rice and topped with sour cream and cheese.
