Menu Plan Monday & Recipe

MONDAY: Pot Roast  (Beef Roast, Red Skinned Potatoes, Carrots, Onions & Celery Cooked in the crockpot all day.)

TUESDAY:  Smothered Grilled Chicken (Chicken Tenders w/ Bacon & Colby Jack) Green Beans and a Fruit.

WEDNESDAY:  Meatloaf & Broccoli

THURSDAY:  Out to Eat

FRIDAY: Assorted Sandwiches & Chips

I made this over the weekend:

Baked Breaded Zucchini Sticks.

I love fried zucchini but lets face it, anything deep fried doesn’t equal all that good for you.  So I think this is a nice alternative.

WHAT YOU NEED:

1-LARGE or 2-Medium Zucchini  cut into wedges

2-Eggs Beaten

1 cup bread crumbs (add more as needed)

Seasoning(s) of your choice added to bread crumbs.  I personally added garlic powder

Preheat oven to 450 degrees.  You will need a baking sheet (I used 2 to avoid over crowding) spray baking sheet with cooking spray.  Dip zucchini wedges individually into egg covering completely and then coat in bread crumbs.  Place on baking sheet.  Bake 7 minutes and turn each stick.  Bake another 8 minutes and serve.  I like ranch dressing on the side.

    Those zucchini sticks look amazing! Definitely a healthier alternative to my favorite appetizer from Maggiano’s… and your meals look great, too.
